Over the weekend, our leader and head monger Alex took part in Phantom Carriage Brewery's one year anniversary party. It was a delicious day full of crafted cheese flights, limited-release brews and an amazing crowd.

This humble sheep milk cheese from Tuscany has been one of our favorites lately. The sheep milk flavors of toasted butter and almond really come through, and the cheese has just enough floral character to really make things interesting.

LE PUITS D'ASTIER
Pasteurized Sheep Milk | Auvergne, France

This cheese is a fun one. The wheel looks like a massive, radioactive yellow donut. Le Puits d'Astier translates to "the Well of Astier," which is what the wheel is supposed to resemble. Despite it's striking appearance, it's a pretty mellow sheep milk cheese with slight grassy and citrusy flavors.

Gruyere is on any respectable short-list of the best cheeses in the world, and Gruyere 1655 from Fromagerie Le Cret stands out among them. The creamery is frequently awarded the Medaille d'Or for producing top-quality milk. This Gruyere hits tropical fruit high notes, has a deep nutty flavor, and is studded with the perfect amount of small protein crystals.

HARBISON
Pasteurized Sheep Milk | Greensboro, VT USA

Harbison is a now and future classic from Jasper Hill Farm in VT. This cheese has a bloomy rind and is wrapped with a band of spruce bark from trees on their property. It has the texture of pudding, with earthy notes and just a bit of raspberry if you look for it.
